Meet the Students- Rinal Karvat
It’s been a while since we featured a student on our blog and having spoken about fondant and Chef Joonie’s foray as brand ambassador for Pettinice, a renowned brand of fondant, we thought it would be nice to chat up one of her students and ardent followers, Rinal Karvat. Incidentally, Rinal thoroughly enjoyed her cake decoration classes with Chef Joonie so much so she signed up for our Diploma program too last year.

1. Tell us about yourself.
I am a passionate baker, born and brought up in Mumbai. I’ve been running a successful home bakery for the past 4 and half years.
2. Why and when did you apply for the diploma program at Lavonne?
It was just after my graduation in June 2013 that I came across a basic in baking workshop in Mumbai that I attended. That is when I decided on taking up baking as a profession.
Two and half years after running my business (Karvat Cakes), I realised there’s more to baking and cake decor. Hence, I started researching for some good cake artists in India and came across Chef Joonie Tan. I took up a class with her and that experience itself was so overwhelming that I decided that there’s no other place I can learn better and upgrade my skills and knowledge in the field of baking and pastry than at Lavonne so I enrolled myself for the June 2016 batch of Diploma in Patisserie at Lavonne.
3. How would you describe your experience at Lavonne?
I had the best learning experience ever. The kind of professionalism, skills and techniques that chefs at Lavonne offered was unparalleled and my experience was enriching. I couldn’t have asked for more.
4. What are some of the cake decor classes that you have taken with Chef Joonie? What do you love most about her classes?
I was fortunate enough to make the right decision of learning my first steps in fondant with Chef Joonie. I can say she is a PERFECTIONIST. Each and every class with her is so memorable. I love everything about her class from kneading fondant to modelling to cake decor and all the minute detailing. She makes working with fondant really simple and fun even for a beginner. Looking forward to learn more and more from her in the coming years.
5. How has Lavonne helped you in your professional pursuit as a pastry chef?
From being a usual home baker who generally used to bake cakes and cupcakes only then turning into a professional pastry chef, Lavonne has helped throughout this wonderful journey. Lavonne was like entering into the world of Art and Science behind baking and made me unearth the finer details in the way we think about different flavours, textures and plating. All the challenges that were given to us by the chefs put us on a path to self-discovery and helped us think out of the box. All of this gave my confidence a much-needed boost!
6. Advice/recommendations that you might like to give future students.
The Diploma course is intense, full of knowledge and fun. Stay passionate about baking and always listen to the chefs. Make the most out of your time and training at Lavonne.
7. What plans do you have for the future in terms of your career?
Currently I have my own Residential Studio and looking forward to upgrade my skills and someday be amongst the finest Cake Artists in India.
