This Is How The Cookie Crumbles

Cookies are a great product to make just because the process is so simple. It’s really quite easy to make them, and there’s room for all kinds of customisation based on the kind of tastes that suit your palette. And you can pick between having them crispy, or chewy.
We decided to make some chewy Marzipan White Chocolate Cookies, and once you take a look at the recipe, you’ll see what we mean about this being simple.

Ingredients

Butter 120g
Brown Sugar 75g
Egg 1
Flour 240g
White Chocolate 100g
Marzipan 75g
Salt pinch

Equipment
Mixing bowls
Handblender
Tray
Silpat
Sieve

Method
Put the butter, brown sugar and granulated sugar in a bowl.

Beat with a hand-blender until the mixture becomes pale yellow in colour. Add the egg and beat until a fluffy, off-white mixture is obtained.

In a separate bowl, sift together flour, baking soda and salt.

Fold the dry ingredients into the sugar, egg and butter mixture, until they are well incorporated.

Do not over-mix. Fold in the chocolate and marzipan chunks.

Chill the cookie dough for an hour. Divide the chilled dough into 20 gm balls and bake at 180 degrees for 12 minutes. Bake until the edges are brown and the top is still soft. You should be able to pick the cookie up off the Silpat.

If you like crisp cookies, as opposed to chewy ones, bake at 180 degrees for 15 minutes.

Marzipan:

Ingredients:
Almond Paste 300g
Icing Sugar 250g
Egg White 46g

Equipment:
Mixing Bowls
Blender
Sieve

Procedure:
To make the almond paste:
Place almond meal in a blender and pulse till it becomes a paste. The result will be a smooth oily paste.
Take 300g of the almond paste in a bowl, add in the sieved icing sugar and mix together till it resembles breadcrumbs.
Add the egg white and knead until a smooth dough is formed.
